Its that time of year again, so Im going to share this with my friends - HOW TO COOK A TURKEY TO ABSOLUTE PERFECTION STRAIGHT FROM THE FREEZER! I learned this trick a few years ago and now its the only way Don and I cook turkey. The only downside is that you cant stuff the center if thats your thing, but I never cared for that anyway. So, heres what you do: Take the turkey from the freezer in the evening before you plan to eat it. Thaw it just enough to get the wrapping unstuck from it and rinse the outside with some cool water. Set the turkey in the roasting pan (not on a rack...put it right down into the pan) and cover with your choice of seasonings. (salt, pepper, sage, thyme, and bay leaves for us) if anything falls off the breast into the pan, no worries. Now cover the turkey tightly with aluminum foil and put in the oven at 250° overnight and into part of the next day - we usually cook a 15 pounder for about 12 hours. If you have one of those pop-up thingies, it will tell you when the turkey is done. Or test the temp and make sure its 165° internally. (When you get up in the morning, you can check the progress and start dousing the breast with the juices every hour or so if you want, but make sure to replace the foil securely) The slow cooking process from a frozen state makes a beautiful, moist, and delicious turkey every time with no fuss and no getting up at 5 a.m. to get it started in the oven!
