It’s recipe week! I’ve made a pledge to try making new and exciting dinners this week, how about you join me? Each post I’ll feature a new recipe using the foods I’ve been recommending to you. The best part? They’re fast, simple and perfect for novice cooks. Miso-glazed salmon with vegetable saute INGREDIENTS 3 Tbsp white miso 2 Tbsp raw honey 2 tsp low sodium soy sauce 4 Wild Alaskan salmon fillets (6 oz.) 1. Mix the miso, honey and soy sauce in a bowl. Adjust portions to taste. 2. Combine salmon and sauce in large ziploc bag and shake to coat. Let marinade in fridge for at least 10-30 minutes or longer if you have the time (up to 8 hrs) 3. Line broiling pan with aluminum foil and lightly coat with olive oil. Place filets in pan and drizzle remaining marinade on top. 4. Broil in oven for 5-10 minutes depending on size of filets. The salmon will flake once it is fully cooked and will be a light pink color. Serve with whole grains and sauteed vegetables: I recommend bok choy, carrots, onions and snap peas. The veggies also taste great with a miso-honey sauce, just add water to thin out from a marinade into a dressing. As a reminder, the veggies should take up half of your plate while the whole grains and salmon should cover the other half. I recommend between 1/2 to 1 cup of whole grains. Let cool and enjoy.
