JRs Rockin Oysters Ingredients: 1 pint or 36 oysters 1 cup spinach (Chopped medium) 1 bunch of shallots (Chopped medium) 2 tablespoons of unsalted butter 1 cup freshly grated Parmesan cheese 4 tablespoons of EVOO Olive Oil 2 French Baguettes juice of 1 lemon A few splashes of Lea & Perrins ½ teaspoon of Chiassons Lemon Pepper 1-2 tablespoon of Chiassons Just Rub It Seasoning Instructions: 1. Preheat oven to 375 degrees 2. melt 2 tablespoon of unsalted butter in a medium frying pan. 3. Add the chopped shallots until translucent 4. Add the chopped spinach. Stir a few minute at medium heat. 5. Add a few splashed of Lea & Perrins 6. Set aside. 7. Drain the water off the oysters and then mix with ½ teaspoon of Chiassons Lemon Pepper and then 1-2 tablespoon of Chiassons Just Rub It Seasoning 8. Put the oyster in the fridge for 1 hour minimum. 9. Ok now oil a 1 dozen cupcake pan. 10. Put 3 oyster in each cup cake indentation in the cup cake pan. 11. Scoop equal amounts of the Spinach mixture and add it on top of the oysters. 12. Add equal amounts of the Parmesan cheese to the 12 cupcake indentations. 13. Bake for 5 minutes at 375 degrees and then turn the broiler on for 5 minutes or until Golden brown. 14. Bake a few loaves of French Baguettes . 15. Let the “JRs Rockin Oyster rest and then serve on small slices of the French Baguettes.... Super Good and Rich, Sapo
