JUST FOR YOU DAD…this weekend past we had an early celebration for Fathers Day. When I asked my Dad what he would like to eat, he simply handed me an incredible book by Giovanni Pilu (Pilu at Freshwater) and said anything from here goes well. Well…so be it and 8 courses later (most featured below) was a very delicious, slow, sardinian and Pilu inspired lunch with a touch of my own. Love you Dad x The Menu: French and italian cheese with home made chicken liver parfait and seed snaps Citrus cured barramundi with grapefruit, radish and watercress Raw fennel, celery heart and carrot salad with lemon and olive oil Pork, quinoa and pecorino stuffed mushrooms Sardines with eggplant puree, rocket and pecorino sardo Pasta with clams, chilli and pancetta Squid stuffed with red quinoa, ligurian olives and pine nuts Raw chocolate tart with berries (inspired by The Holistic Ingredient)
