Kimchi, one of Koreas most iconic fermented foods, is getting some well-deserved attention in the NYTimes. When speaking of beverage pairings at the end of the article, while we love the innovative east meets west pairing of kimchi with German spätlese riesling (sounds delicious!), we wonder why makgeolli was conspicuously not mentioned? There is a fantastic makgeolli brewery, Slow City, that is located outside of Chicago (and weve heard distributes in NYC-- can anyone confirm for us?). And of course, if you cant find a quality local example of makgeolli, you can always brew your own. ;) ~D & B, Makgeolli Makers
