Kimjang (김장) is the traditional process of preparation and preservation of kimchi in the winter time. During the summer, Kimchi is made fresh from seasonal vegetables. But in late October or early November, people need to prepare large quantities of kimchi to provide nutrition throughout winter. Kimjang lasted for 2 to 3 days with help from many people. The number of cabbages prepared depended on the number of household members. Considering the number of cabbages and amount of preparation for Kimjang, it was not a job for just 1 or 2 people. Peoples help to wash cabbages, prepared ingredients and stuffed ingredients inside each cabbage leaf. Kimjang was listed as an UNESCO Intangible Cultural Heritage in December 2013.
