Latest obsession...anything pumpkin! High in fiber, low in calories and the perfect fall flavor . Combine two scoops of chocolate Shakeology, 1 tablespoon of ground flaxseed or psyllium husk powder (awesome fiber and great for detox and digestion), and half a cup of pumpkin purée in a food processor. Pulse until it forms a dough. Spray a mini muffin pan with oil or use paper liner cups. Divide the dough into 12 small balls. Place one into each muffin cup. Press into a disk and make a depression in the middle. Fill with half a teaspoon of peanut butter in each depression. Now for the chocolate topping! I combined 2 tablespoons of melted coconut oil with 1 tablespoon unsweetened cocoa powder and one scoop of chocolate Shakeology in a mixing bowl. Spoon this on top of your pumpkin bite. Place in freezer for 30 minutes or until chocolate hardens. Store in fridge or freezer. Absolutely delicious! Each cup only has about 70 cal with 4 g of protein and 3 g of fiber. My bedtime snack this week with pumpkin tea, of course. Pumpkin delights to be continued...
