Lidia is one of my favorite cooks on t.v. but these two are a winner and very surprising.----Large pot. Line with olive oil and fry garlic. Add crushed tomatoes and hand full of basil let cook. Steam little neck clams until they open. Clean clam out of shell set aside. Remove basil from tomatoes and add clam juice. If sauce is thick you can add a bit of clam juice. Take day old dry bread,cut into cubes and add to sauce. Yes you read me right. Smash the bread into the sauce and add clams.Stop cooking or clams will get tough.Garnish with chopped basil. She calls this clam chowder Italian style. If you live in an area where fish and shell fish is abundant this certainly is a hearty meal. Cant wait to try it.---Take three large zucchini and drop into boiling water. Remove and let cool. Slice zucchini lengthwise place on paper towels. Take large slices of Italian bread and line a 9x13 pan. layer zucchini on top cover with your favorite sauce,maybe with ground sausage. Add mozz. cheese and parm. Repeat layers until you end with bread.Generously top with tomato sauce,mozz. and parm. cheese. Bake until top is golden. Let settle until cool, cut in squares. In the other recipe I meant you could add some bottled clam juice if you didnt have enough juice from your little necks. Leave it to lidia. Happy Days!
