Linda Allen APPLE SPICE CAKE WITH CARAMEL SAUCE CAKE INGREDIENTS: 2 eggs 1 cup oil 1 cup sugar 2 tsp. Vanilla 2 cups all-purpose flour 1 tsp. baking soda 2 tsp. cinnamon ½ tsp. salt 3 ½ cups chopped apples CARAMEL SAUCE ¼ cup light brown sugar 4 tbsp. softened unsalted butter 3 tbsp. heavy whipping cream 1 ½ tsp. vanilla Preheat oven to 350 degrees F spray a 9 x 13 cake pan with cooking spray and set aside. In a large bowl mix eggs, oil, and sugar until thick and creamy. Add the vanilla just until blended in. In another bowl mix together the flour, baking soda, cinnamon, and salt. Slowly stir into the wet mixture. At this point the batter will be thick, fold in the apples. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean, let stand in the pan for 5 to 10 minutes. Invert onto a serving board or plate, you could even decide to leave it in the pan. While still warm pour the caramel sauce over top and spreading all over the cake. Caramel Sauce instructions: Put brown sugar and butter in a medium sauce pan over med heat, stirring just until the butter has melted. Then carefully pour in the heavy whipping cream, reduce heat to medium low and simmer for about 5 minutes. Remove from heat stir in the vanilla. This can be made while the cake is cooking.
