Lobster Bisque.....with Bacon & Butter fried croutons! Lobster Bisque: Dice up 2 pounds of Lobster…add salt and white pepper to taste …set aside. In sauce pot: Mix 2 ½ C chicken stock with 2 ½ C heavy cream…add 1 tsp salt and 2 tsp white pepper. Simmer. Melt 4 Tblsp butter in a dutch oven or large sauce pan… add 1 cup diced onion or shallot… sauté until translucent. Add ¼ cup of flour… cook for 2 minutes or so. Add the milk mixture to the Flour and Onion mixture, make sure it is smooth and bring to a boil.. reduce heat to simmer. Add ½ C of white wine… 1 tsp Worcestershire sauce, 1 tsp minced garlic…1/4 tsp nutmeg…1 tsp sweet basil..4 Tblsp tomato paste… the juice of 2 lemons. Combine well and let it get thickened. In a skillet melt 4 Tblsp butter with ¼ C white wine…. Bring to a foaming bubble…add diced Lobster…cook 1 minute or so….DO NOT OVER COOK. Remove lobster…add the cooking liquid from the lobster to the bisque….Add 4 – 6 oz softened cream cheese and bacon crumbles…. Mix well. I added Havarti cheese… but I add that to EVERYTHING!! DO NOT ADD LOBSTER UNTIL YOUR READY TO SERVE. Croutons: I used the left over bacon grease and 4 Tblsp butter…. Cut up some croissants. Slowly tossed those in the butter and bacon great …toasted them over low heat.
