Made Hubs a peach krumble with apple juice and a little cornstarch. Did food prep for the week - 2nd picture is chopped veggies for kale salad and then 3rd picture is kale mixed in. This salad is the foundation for the next 3 days - I will add sunflower seeds or beans, avocado, perhaps cucumbers and tomatoes, on occasion, tofu - I also cooked some kale - I need a week of greens so cooked or raw, I am fulfilling my goal. I also plan to make a faux tuna with carrot pulp and wrap it in a collard leaf with the kale salad. I have watermelon, peaches, sliced cucumbers and in that is more than enough protein. I will have chia puddings as well made with coconut milk, chia seeds and adding in blueberries. It is on!
