Made a hybrid Potato/Cheddar/Broccoli soup tonight to chase away the winter weather we are getting tonight. Hubby loved it! I peeled and cut 3 large potatoes, and boiled them for about 15 minutes. Cut up some onion and garlic, and sauteed in a pan. Added some chicken broth, milk, (about a cup and a half), the potatoes, the onion/garlic mixture and the broccoli and placed it all in the blender. My VM chugged through it, mixing up the broccoli and potatoes, but had trouble, overheated, and stalled out. It was mixed up pretty well at this point, so I just poured the mixture into a large sauce pan, added some shredded cheddar cheese, and simmered for about 20 minutes. It was very hearty; a real stick-to-your-ribs meal. Hubby is still raving over it!
