Made a vegan dinner for good friends Christopher and Justin last night. Experimented and came up with a good recipe for a mixed vegetable braise: one stalk Brussels sprouts one big lump of Jerusalem artichoke, broken up and trimmed. [About the size of a cauliflower, though heavier.] one big onion lots of chantrelles [big yellow mushrooms] Trim & cut the sprouts in half; brown them in a wide cast iron pan in a few spoonfuls of olive oil. In another pan, saute the onion in olive oil till golden, add the chantrelles, and continue to saute till they release their water and cook through. When the sprouts are about half cooked add the chokes. I had a timing issue and used chunks, to delay it; id use slices or cubes if I wanted it to cook faster. Toss with a little more oil and cook on high heat for a few minutes. You dont want to overcook the chokes, though I find that sprouts are good in a range of donenesses. Put it all together, adjust seasoning of salt& pepper, a little vinegar, add a little water, cover and steam for 15-25 min or until the veggies are tender. People liked it.
