Made my first Peanut Butter Cake....secret ingredient plain yogurt turned out real moist Here it is 1 cup of brown sugar 2 eggs 1 tsp vanilla 1/2 cup peanut butter Whip together in a small bowl 2 1/2 cups cake and pastry flour 2 tsp baking powder 1 tsp baking soda sift these ingredients together take 1 cup of plain yogurt 1 cup of boiling water alternate wet with the dry until a smooth batter is made Bake in two 8 inch cake tins 350 for 30 minutes Make a simple syrup with boiling water and sugar brush on the cake Let cool Frosting 2 1/2 cups of sifted icing sugar 1 tbs softened butter 1/4 cup of peanut butter 1 tsp vanilla 1/4 to 1/2 cup of half n half or 35 % cream Spread over 2 layers Top cake with about 1 cup of ground salted peanuts Melt 2 squares of bittersweet chocolate with 1/2 tsp butter sprinkle salted peanuts on cake drizzle with melted chocolate Set in fridge till chocolate hardens
