Melt in your mouth Ribs with Red Potato Salad with Bacon and Onions. Yes I know it is summer time and cooking your ribs on the grill is how everyone expects their ribs to be prepared, but I like to beat to my own drum. It’s the oven all the way for me when it comes to cooking ribs. I can put them in the oven and walk away. When it comes time to eat they are literally falling off the bone and I did not have to slave and watch them over a hot grill. 6 lbs. of Ribs (pork or beef) 1 Large bottle of your favorite barbeque sauce (I could tell you how to make your own but let’s keep it easy) Place ribs in a large roasting pan and cover with barbeque sauce. Cover with foil and cook at 350 degrees for 3 hours. Take foil off after the first hour and continue cooking for 2 more hours. Serve immediately. I promise the meat will just fall off the bone and melt in your mouth. Red Potato Salad with Bacon and Onions I guess by now you have noticed I like to use red potatoes. They are delicious and the best part is that you do not need to peel them. I can’t remember the last time I peeled a potato. This recipe is chuck full of flavor and a real winner for dinner. 1 Pack of Red Potatoes 1 Pound of Bacon 1 Medium Red Onion, chopped (Optional) 2 Package of Frozen Peas, steamed and cooled(Optional) Mayo Salt Pepper Rinse potatoes under water, washing away any loose skin. Trim any dark or bruised areas, no need to peel. Cut into bite size cubes and put on the stove to boil. Meanwhile cook bacon well so it will be easy to crumble. Chop red onion and set aside. (If you don’t like raw onions, sprinkle a little onion powder instead) Steam the peas. (Steaming is where I use my microwave the most. It saves time and you can time them perfectly) Put the peas in a microwave safe bowl with a cover. Add a little water to the bottom of the container and steam for 3 to 5 minutes. Drain and let cool. Drain potatoes once they are tender enough to stick a fork in. Let potatoes cool a bit and then mix in a large bowl with crumbled bacon, onion and peas in a bowl with mayo, salt and pepper to your taste. Serve immediately! Delicious! Enjoy and Bona Fortuna!!
