Metal Therapy Recipe of the Week! Hey guys, every week Im going to be posting a healthy recipe. The first one we have prepared is: Green Lentil and Chicken Curry. Ingredients: (serves 4) 2 tbs coconut oil 1 knob of ginger 3 cloves of garlic 2 eyebirds chillies 1 medium brown onion 2 medium carrots 2 large celery sticks 3 sweet potatoes 1/2 can of diced tomatoes 270ml can of coconut cream 2 tbs Keens curry powder 1 1/2 cups of lentils 650ml of water/chicken or vegetable stock 4 skinless chicken thighs (with the bone) Salt, to taste Method: In a large pot, melt the 2 tbs of coconut oil. Grate the ginger, garlic and add to pot with 2 chillies, sliced. Cook until golden. Then add onion, carrots, sweet potatoes and celery, all diced. Cook for about 5 minutes until vegetables start to soften, then add tomatoes, lentils, coconut cream, curry powder, water/stock, salt and finally the skinless chicken thighs. Cook until lentils become soft, roughly an hour and a half. ENJOY!
