The key to the simplicity of this delicious cake is the fact that there’s absolutely no cooking required — it just needs a minimum of four hours to set, and it’ll be ready to serve. Start by making the gluten-free fruit and nut base in our Blueberry and Lemon Cheesecake from Quick Fix in the Thermomix, and press it into the base of a lined spring form pan. Then, whip up our cheesecake mixture in our Raspberry and Lime Cheesecake from Quick Fix: Every Occasion (with or without the raspberry and lime), pour it over the nut base, and smooth it out with the back of a spatula. Finally, simply place the cake in the fridge to set before taking out to serve. And that’s it! Gluten-free cake is not easy to come by, and this is not only super easy to make, but it’s also wonderfully versatile and can be adjusted easily for individual tastes. Experiment by folding different ingredients into the cheese mix before pouring it over the base; try chocolate chips, berries, stewed fruit, lemon rind, or some cinnamon or vanilla. We love to simply top our cake with fresh strawberries. And if you’re making this recipe for a chocolate fan, we have a tip that’s guaranteed to impress: line your spring form pan with baking paper, and once the base is in, brush melted chocolate (white, milk or dark) on the inside rim of the pan.
