Overseas, price ranges from $30-$80 a cup. And it comes from cat poop. What’s interesting is that the civet is not really a cat. Although it kind of looks like one. It’s a nocturnal mammal that looks like a cross between a cat, weasel and a raccoon. Civet coffee is made from coffee beans found in the civet’s poo. Aside from the name, civet coffee, it has other names depending on where you are. It’s known as kopi luwak in Indonesia, kape motit in Cordillera, kape alamid in Luzon, or kape musang in Mindanao. Many of us know it as alamid coffee or simply civet coffee. Civets feed on the fleshy pulp of fruits like coffee cherries. They’re very good at picking the best and ripest coffee cherries. Enzymes in their digestive system break down the flesh of the fruit and what remains are the coffee beans. After the beans are exposed to some special digestion process, the civet takes a dump. The poo is rinsed away and the beans are collected. The high price of this coffee is due to the unique and labor-intensive process of making the coffee. The taste of civet coffee varies depending on the kind of coffee beans that are ingested, and how the coffee beans are processed, roasted, aged and brewed. Generally, it has a bold and full flavor and is less bitter than regular coffee. Some coffee connoisseurs describe it as being rich, less acidic, and with a taste that has a hint of cocoa. Others say it has a fruity and nutty flavor.
