Most people believe that WHOLE wheat if healthy - its the refined wheat that is bad. It is true that refined grains of any kind are essentially worthless. One is simply consuming PURE STARCH when eating a slice of white bread. Removing the GERM (containing all the micronutrients) from the wheat, through the refining process, leaves only starch. Adding back a few vitamins only looks good on the label but is worthless nutritionally without the hundreds of other natural phytonutrients. Also, what we call wheat today bears little resemblance to the wheat consumed only a century ago. With modern hybridization and gene-modifying technology, the wheat of today shares almost NO genetic, structural or chemical likeness to what was consumed around 1900 and earlier. This has caused a major problem: Our physiology is being challenged with ingredients for which it is not genetically prepared. It is now understood that food is a powerful modulator that can change our DNA for better or for worse. Beyond simply serving as a source of calories, protein, fat and micronutrients, food actually regulates the expression of many of our genes. Science has only just begun to understand the DAMAGING consequences of wheat consumption from this perspective. Research is showing that consuming modern wheat is unhealthy to the brain.
