New Zealand mussels 3 large chopped tomatoes 1/2 cup chopped cilantro (more if you prefer) 2 tablespoon chopped garlic 1 tablespoon extra virgin olive oil Lime juice (from half a lime) Salt and pepper to taste Rinse the mussels in water and apple cider vinegar mix. Heat oil in a pan Add in chopped garlic and cook till garlic is softened. Add in tomato, cilantro , lime juice. Place the mussels in the baking sheet and add the sauce and cook about 15-20 min. Remove mussels from the pan, discarding any mussels that have not opened.
