My favorite thing to make on cast iron (after breakfast food) is bone-in pork chops: Have your butcher cut your chops 1.5-2 thick, allow to warm up on the counter for an hour prior to searing. Dry with paper towel and the rub with olive oil coat with kosher salt and black pepper and the sprinkle a packet of ranch dressing powder (the packet should be good for both sides of 4 chops). Sear over medium high heat approx 3-4 min each side, top each with a pad of butter then cover the skillet and remove from heat for 5-10 mins (the pan will continue to slowly finish it, you want the internal temp to be approx 160). Allow to rest for additional 5-10 mins and enjoy.
