My new favorite breakfast...Overnight Oats. 1 cup of milk (I prefer coconut milk) ½ cup of rolled oats (not quick cooking oats) ½ teaspoon vanilla extract ½ teaspoon of cinnamon 1 tablespoon of raisons 2 tablespoons of chia seeds Mix all the ingredients together in a bowl or container and cover. Place in the fridge for at least three hours or overnight. In you prefer it warm, just heat in the microwave or stovetop. You may need to add a little extra liquid. Note: The chia seeds help to absorb some of the liquid and thicken the oatmeal. If you are not using chia seeds you should reduce the amount of milk by about a ¼ cup. This recipe has daily recommended amounts of 50% calcium, 32% iron, 25% vitamin D and 50% vitamin due in large part to the chia seeds.
