My recipe for Beef Stroganoff. You will need 1-1 1/2 lbs. of Sirloin or top sirloin. 1 can cream of mushroom soup. 1 cup (8oz.) sour cream. Extra wide egg noodles. Butter, as needed. Melt 3-4 pats of butter in large skillet. 1 bottle of red wine, I use Sutter Home sweet red or Reunite sweet red. Remember, the recipe for cooking with wine is: 1/2 in the recipe, 1/2 in the cook. Cut meat across the grain in 1/2" strips. Cut the strips in various lengths from 1/2" to 1 1/2" cubes. Turn the heat in you skillet to med. high and put in the meat to brown. Then put on the water for your pasta. Brown the meat on both sides, this should take about 15min. altogether. When the meat is brown on both sides add 1cup of wine, this should barely cover the meat. bring the wine to boil then immediately reduce the heat to simmer, you want to cook off about 1/2 the volume of the wine. Add the pasta to the water, I use the Skinner dumplings, add enough for four people. when the wine has cooked off to about 1/2, add the cream of mushroom soup, stir in pretty well, then add sour cream. Cook until sauce starts to bubble, remove heat. Drain water from pasta and add about 3 pats of butter(more if you like), stir in well. Put Pasta on plates, add sauce on top of noodles and add meat. This should be served with a green vegetable , add another colored veggie for variety. I think green beans and beets go well with this, but this is my recipe for Stroganoff, not a whole meal suggestion.
