My version of Steamed chicken INGREDIENTS : 1 Kl Whole chicken Lemon grass leaves (bunch and tie a knot) 3 lemon grass stalk ( minced) Ginger (minced) Garlic (minced) 6 Pcs. Calamansi ( juice extracted) 1 Tbsp. Atshuete (color extracted) ½ Cumin powder (optional) 1 Tbsp. Oyster sauce 1 Tbsp. Soy sauce ¼ Cup of water ½ Magic Sarap (optional) 1 Tbsp. olive oil or any cooking oil ½ Tbsp. Sugar 2 Tbsp. Ground black pepper PROCEDURE: 1. Wash and clean the chicken, then set a side and drain the excess water 2. In a deep bowl combine Calamansi juice, Atshuete, Cumin powder, Oyster sauce, Soy sauce, Magic Sarap, olive oil, Sugar , Ground black pepper and water mix well and make sure all ingredients dissolved. 3. Insert the stuffing Lemon grass leaves, Ginger, Garlic, and pour some liquid marinade inside, sealed the opining area using toothpick and tie the legs of the chicken. 4. Rub the raining ground black pepper and lemon grass stalk ( minced). 5. In one plastic put the chicken inside and pour the remaining liquid marinade, make sure the plastic is not leaking then seal. 6. Leave the chicken in the fridge overnight and make sure turning the other side every 6 hours 7. The next day grill the chicken for at list 30 to 40 mins or just enough to make the skin golden brown. 8. After grilling wrap with aluminum foil and steam for 2 and half hours or more 9. Then serve and enjoy.
