My way of preserving fresh strawberries (besides freezing them which changes the texture and flavor) so they wont turn soggy or tough in the fridge is this: I cut up a whole bunch of strawberries and put them in a big bowl and fill it almost all the way to the top. Then I make some sugar free strawberry Jell-O and use a little less water to make it nice and firm since the strawberries have moisture, especially from being washed and sliced. Then I pour the Jell-O all over the berries till they are just covered and put the whole thing in the fridge. You get tons of strawberries to use which ever way you want with very little Jell-O, but they are tasty, not sugary or soggy and certainly not tough skinned like they would end up if you kept them in the fridge for a week.
