Needed a cool dinner on a hot ant humid bay area night. I just happened to have everything needed for caprese salads, thick sliced mozzarella, really nice tomatoes, fresh basil leaved, just a little red onion for effect, and a great balsamic reduction with a little olive oil as dressing. Asiago cabatta (oven toasted) with a parmesan melt on top worked as really good croutons. THIS really hit the spot!
