New Year’s greeting From the Edge! A new year always bring in “thoughts of old times” and “hopes for new times”. I am no exception to this. Looking back at last year has left me a lot to think about. Still on the positive side we continue to stay busy thank to you our faithful supporters. However we are going into 2014 with renewed hope thanks to our newly formed management team. Kelly has just completed her first year and is now assisting Patricia in the office full time with administration and event booking. Johnny will have been here a year next month. He is starting to get to know some of you as he works five nights a week managing the dining room. Jessica, who worked for us a few years back, has returned in the capacity as manager this time and she has been here since April. Charlie our newest member is now managing the dining room during the day Monday through Friday and is steadily getting to know the regulars and working on developing the staff. So we are off to a great start. Jesus and I are still in the kitchen along with the team. We have a really nice crew so I am hoping we can keep them all throughout the year. I am actively recruiting a chef des cuisine to work in the kitchen with Jesus so I can move on to other things. I still enjoy cooking and will always be involved in the developing of new recipes; however the day to day operations have to be handed over. It is time! I hope we find the right Chef des Cuisine this year. We are refinishing the booths in the dining room this winter and repainting the Fred Harvey Room. Making it warmer and more in keeping with the Turquoise Room. It is still green as it was when it was the gift shop. Seems like an age ago! Allan has been busy with the hotel so there are many changes there to take in on your next visit. He has started on the spa and pool. I know from all the comments made to me by many of you that this will be a welcome addition to the property. This will be the ideal place in which to relax and rejuvenate oneself after a long drive. I do not know when it will be finished, you can always ask when you call to make your reservation. Food is my thing and I am once again excited about the year ahead. McClendon’s produce in now being delivered to Winslow once a week year round. This is a big deal as many of you may remember I would haul it up from Phoenix in the winter months. The farmer’s market in Flagstaff has continued to grow and bring us more and more local products. Fruits and vegetables as well as chickens and turkeys, quail and eggs. The Churro Lamb project is also thriving thanks to the hard work of Antonio and Molly Manzanares, Colleen Biakeddy and Irene Bennally. I bought over 100 head of Churro last year and was able to for the first time pass some along to members of the CSA in Flagstaff as well as two fellow chefs, Frank of the Cottage Place in Flagstaff and Charlene of F and B in Scottsdale. Those of you in the Arizona area may have seen our mention in the January issue of Phoenix Magazine, AZ’s 50 Best Restaurants. We also had a nice mention from Craig the editor in the editorial column. So here we are in our 14th years of business still getting press and recognition for all the hard work our staff has accomplished over the past few years. Valentine’s Day falls on a Friday this year so here is how the menu will work. I will create a special menu in the same format as our regular menu. A la carte. This will be offered over a four night period from Thursday 13th of February through Sunday the 16th February. Please make your reservations early so you can make your plans and we can accommodate you at the time of your choosing. The menu will be posted by the end of next week. Most of the regular menu will be available, all of your favorites along with some Valentines themed dishes. Plenty of chocolate for you to enjoy. The chocolate soufflé will be served with a Chambord Raspberry Chocolate Sauce, whipped cream and fresh raspberries in honor of Valentine’s Day. All of our holiday menus are now a la carte throughout the year. Easter falls on April 20th with Mother’s Day three weeks later on May 11th. Same format as above with a special menu being served over the entire weekend. The menus for these holidays will start on the Friday night and run through the Sunday night. Easter Sunday and Mother’s Day we open for dinner at 11.30 and serve all day till 8.00pm . The lunch menu is not available on these two days. So please call early and bring the entire family. Remember we cook and serve the dinner as well as do the dishes! Many thanks for the continued support over the years. Without you we would not be here.
