New recipe I am trying they look great. I have not cooked them yet that will be after Kim comes home and we go for a run. Here it is Shrimp Stuffed Zucchini Makes 4 servings Per serving Calories 349.9 / 14.3g fat /16.2g Carbs / 38.6g Protein Ingredients: 2 Medium Zucchinis (about 10 inches long) 1 pound 41-60 Shrimp 1 cup Shredded cheese (full fat) 4 ounces Fat Free Cream Cheese ½ cup Hormel less fat Real Bacon Bits 2 ounces fresh Baby Spinach 1.5 ounces diced onions ½ cup Panko bread Crumbs 1 clove (1 table spoon) minced Garlic Old Bay Seasoning Directions Clean the shrimp and remove the tails. Set a side 16 shrimp and lightly grill the rest. Dice up cooked shrimp, onions and spinach. Place in a mixing bowl then add cream cheese, shredded cheese, bacon bits, garlic and season with Old Bat to taste. Mix thoroughly by hand and set aside. Cut ends off of Zucchinis then split in half, with a melon baller deseed the zucchini making them into boats. Lightly spray with an olive oil spray and season with Old Bay. Divide the stuffing mix evenly into each zucchini boat then top with 1/8 of a cup of panko bread crumbs per boat. Place 4 of the uncooked shrimp on top of each boat and season with more Old Bay. Bake in a 375 degree oven for about 20 minutes (can also be grilled.
