New to the group. I just harvested a bunch of purslane. It was crowding my sotol so much so that I couldnt even see it anymore. My soil is quite salty. I am in the Chihuahuan desert on the Texas-Mexico border. With that said my purslane tastes very strong and salty not at all like the descriptions I have heard of it tasting like spinach. I am thinking it is due to the salt and alkali content of the soil. How do you prepare it? Do you eat the whole plant with stems or just the leaves? I dont want to waste it. Opinions and suggestions please.
