Noodley noodles for supper tonight Thats what my niece says and I could hear her sweet little voice in my head as I made this delicious Thai green curry noodle soup. I started with sautéing shallots garlic and ginger in a bit of oil. Then added chopped carrots, zucchini, yellow pepper, baby corn and a chopped tomato. A 2:1 combo of stock and coconut milk made the soupy part with a small splash of fish sauce, a lot of green curry paste and some lime juice making the awesome flavour part. I used udon noodles which I find extra noodley and had chopped basil and cilantro on the table for that herby love that makes everything better. It was tangy, creamy, flavourful and summery all in one bowl I think my niece would love it :) Ps theres two photos of the soup. I like the second one and hubby liked the first. Which do you like better?
