Not cast iron related, but...bacon. I worked at a Greek restaurant and served gyros~that cone of *stuff* the owner called Greek bacon Chopped, pressed formed who-knows what. Chef was a friend and fellow culinarian. We ordered lamb bellies. Threaded them onto the the spindle and actually cooked them on the gyro machine. Had a pan to catch the grease. Absolutely incredible. If you have friends that work in the restaurant biz, try to get Greek bacon. (Y)
