OK Folks FRED celebrating World Cup 2014 and Canadian Grilling Season with 32 Grillers in 32 Days, one from each of the teams competing in the World Cup. Getting down to the end, final goes Sunday. So it is set Argentina vs. Germany for the marbles. Tonight seeing the World Cup brings together different cultures, countries and culinary flavours, I combined two for a nice summer BBQ option. BRAZIL and ALGERIA. For BRAZIL – a grilling and meat and beans culture – I chose grilled Brazilian Beef Tenderloin Churrasco Fred. Was supposed to be named for Brazilis Fred, I guess it just named for me... lol... Churrasco is a traditional Brazilian variance on the Argentine Chimichurri, a salsa of tomatoes, cumin, lime juice, onions, garlic, chili and a splash of vinegar, and the secret ingredient – a splash of ketchup. I used beef tenderloin pieces and marinated them for about an hour. They set up nicely on the grill HOT , rotate to get the marks and seal the flavour, spoon the reserved salsa and onions on top once flipped turn the heat down low and close the lid. A nice cool summer salad – Algerian Adas and Lime, a vegetarian dish of lentils, onions, garlic, cumin, coriander, cardamom, pinch of clove, olive oil, apple cider vinegar, salt and pepper. I used canned lentils, make sure you rinse them with really cold water through a sieve until it runs clear. Or you can cook from dry lentils. Mix all ingredients to taste, and set aside in fridge until ready to eat. When ready, add a diced tomatoes, seedy section removed, mix well give a fresh squirt of lime and crack of pepper. Serve with bread of choice and a cold drink, a beer or iced tea would work best.
