First off EVERYTHING needs to be room temp--not cold, not hot. 5 jumbo eggs (whip together) 1 stick butter (I use REAL butter, but cut back to 3/4 stick) 1 1/2 cup buttermilk. (I like the real stuff with the curds in it, but as I get fatter and fatter Ive gone to skim buttermilk). NO, you cant make that fake buttermilk with milk and vinegar or dried in the can. The oven needs to be preheated to 350 and make sure you have a rack about 1/2 way of the oven). Next, get yourself one of the 9 inch deep dish pie pans, glass works best. Then spray it with that butter flavored cooking spray, go lightly, not a lot of spray! Mix the top 3 ingredients until they are well blended. To that add: 3 cups of sugar (I only use 2 1/4 cup and I use Splenda and before yall comment, I know Ill get cancer from it, but dont really care, its just one more thing to add to the list!) 5 Tablespoons flour (I use self rising) 2 tbs of vanilla After its blended real smooth, pour the mixture into the pie plate (I dont use a crust, but guess you could. Place the pie pan into the center of the over. Kinda watch it, once it turns just a little brown on top, (about 25 to 30 minutes) Sick a knife in the center and see if you get just a little bit of the pie on it. After you have this pie one time, youll know how well you want to cook it, I like the pudding on the bottom. Remember the pie keeps cooking as it cools! Let the pie cool (you can handle the pan without feeling heat). Now, cut yourself a SMALL piece and its a unique, sweet, lemon tasting treat! Hey, its called BUTTERMILK PIE.
