ORANGE & GRATED RADISH SALAD WITH ORANGE FLOWER WATER Please don’t dress the grated radishes too far in advance, lest they lose their texture. Serves 4 to 6 as part of traditional salad course 1 to 2 bunches round red radishes (approximately 1/2 pound trimmed, but not peeled) 1 1/2 tablespoons granulated sugar 2 navel oranges, peeled and sliced crosswise 2 tablespoons collected orange juice 2-3 teaspoons orange flower water 1 1/2 tablespoons fresh lemon juice or more to taste Salt to taste Garnish: A dash of Ceylon cinnamon or 3 to 4 slivered spearmint leaves 1. Use the fine shredding disk attachment on a food processor and shred the radishes. Makes about 1 cup. Sprinkle with sugar and let sit 15 minutes. Drain off the excess liquid. Wrap the radishes tightly in parchment paper or plastic wrap and keep chilled. 2. Just before serving, mix the orange juice with orange flower water, lemon and salt in a serving bowl. Unwrap the radishes; add to the bowl and toss. Sharpen the flavor with more lemon juice and correct the salt. Arrange the orange slices around the inside of the serving bowl and sprinkle with cinnamon or mint leaves. Serve at once
