Oh its ratatouille time !!! So much fun Tonight tried a new way of making.-very happy with it ; On a shallow baking dish on parchment paper I cut up cooking onion sweet onion,green pepper ( because I didnt have any coloured ),a small yellow zucchini some eggplant sliced in half.herb of choice (oregano) No oil Bake@ 425 for almost one hour till tender but not burnt In a separate shallow pan put three med tomatoes also no oil cut up into the oven at the same time . No need to stir any thing Bring out the tomatoes first let sit When veg is tender bring out and gently fold in the tomatoes add some olive oil and a little balsamic vinegar and salt to taste, put all into serving dish ,serve .Serve with mashed potatoes loaded with parsley and a baked corn cob. Delish!!!
