Ok, I made up some Bruschetta tonight from the stuff in the garden. It turned out great - BUT...way too much garlic again. I think recipes asking for garlic need to be halved when I use the stuff from the garden. Recipe used 7 cups of tomatoes - both the Ox Heart paste type, and a few hillbillies - skinned, and squeezed then finely chopped. 1 cup finely sliced fresh sweet basil leaves (apx 45 large leaves) 3 tsp ground up black peppercorns 1.5 tsp salt 1/2 cup finely chopped/minced hard neck garlic (6 lg cloves) - next time 1/4 cup! 1/2 cup finely chopped red and white onion 1/3 cup organic balsamic vinegar 1/2 cup organic olive oil 1/2 cup freshly grated and finely chopped parmesan 1 Loaf organic Ciabatta loaf from Bread Affair from the local farmers market. Oh man...the garlic is out of control....
