Ok folks recipe time. Now that Josh has diabetes I have found it a challenge to make him some of his favs without going over his carb count for the meal. One of his favs is lasagna. However all those noodles (yes even the wheat ones) are loaded with carbs. So I basically made him lasagna but instead of noodles I used very thin sliced egg plant. Its very good. I make it with pizza sauce because it has less carbs than spaghetti sauce and adds a zing that is actually better. 2lbs ground beef, one LARGE eggplant, two jars ragu pizza sauce, and 16 oz of italion shredded cheeses. Spread two table spoons of sauce on the bottom of glass casserole dish to keep from sticking. Brown ground beef, drain, and then mix with the two jars of sauce. Very thinly slice eggplant (as thin as possible about 1/4 inch) lay down a layer of eggplant then enough sauce to cover it then enough cheese to cover that. Continue to layer.(ending with cheese) Number of layers will depend on depth and width of dish). Cook on 350 for forty five minutes. YUMMO (Ill post pics in a while)
