Ok, so... 1 cauliflower head chopped finely in the food processor... Steamed in about an inch of water for 5 mins with lid on, drained (well, I mean really well... I used a fine mesh sieve, then a tea towel to wring it out) then in a bowl with a beaten egg, a bit of grated cheese, some salt pepper and basil - mix it up. Line a baking tray with baking paper and pour mixture onto it in a flat thin pizza base shape. Chuck in the oven at a high temp for about 20 mins, or until it crossing the done/burnt threshold.. Pop some topping on (whatever you want... I had a bit of leftover mince with a bit more cheese) and pop back in oven for 5/10 mins. This is an amazing lower carb pizza alternative :) Tastes great (no hint of cauliflower really) and totally holdable when in slices! Definitely going to make this again. Thanks for the tip Tricia :) The base will cost you 4pps if you used 20g normal chedder... Then just propoints the toppings :) serve with a lovely salad x
