Ok, the recipe for my super delish super easy SWEET POTATO QUINOA & CHICKEN MEAT LOAF is here as promised in my last fb post: INGREDIENTS: *500g extra lean chicken mince (less than 5-6g of fat per 100g) *300g of - 1 medium large peeled cut sweet potato *60g of rolled quinoa flakes (any healthfood store) *2 egg whites *2 teaspoons of olive oil to lightly grease the silicone baking moulds *homemade spice mix (2 teaspoons curry powder, 1 teaspoon garlic powder, 1/2 teaspoon of each - ground cumin, ground corriander, turmeric, chilli powder and ground cinnamon) INSTRUCTIONS: Please see my last post for a photo to see step by step instruction. 1. Steam sweet potato and mash it wirk for in a bowl. 2. Add all the other ingredients into the same bowl except the olive oil and mix with cleaned washed hands or wooden spoon. 3. Spoon the mixture into greased silicone baking moulds and bake in the oven for 25mins on 180degree Celsius. After about 15 mins I cover my muffin mould slightly with aluminium foil to prevent burned bits on top. PS: I bake half in a banana bread mould. I find it is perfect to slice it and put into salads. The other half I bake in muffin mould (gives me 5 muffin sized meat balls) which are perfect to grab and eat on the go. Total macronutrients ratio of this dish (all of it) is 1250cals, 120P/100C/40F. You can signifivcantly decrease the fat contents by mincing your own chicken breast instead or ask your butcher to do that for you. 1 Sweet potato quinoa chicken cup is therefore only 125 cals, 12g of protein, 10g of clean complex carbs and 4 g of fat. If you cut the meat loaf into 5 equal parts, each part will be the same macros as 1 cup. I ussually eat 2 cups with side of salad or veggies and I am happy and full as...
