Okay Mark, Felix Edmond & Janet... in case you want to recreate the Chipotle Cheddar Biscuit monstrosity here is the cheat sheet (please note that Im assuming you know how to make biscuits...if not let me know and I can walk you through the steps, no charge for the extra snark): So I doubled the following recipe though I substituted 1/3 cup butter to go with the original 1/3 cup shortening, for flavor. (Make sure both are well chilled ahead of time). I added 1-2 Tbsp of Chipotle Chili powder depending how spicy you like it. LatteBoys hot tooth seems to be failing him these days because he whined a little bit with only 1 1/2 tablespoons in a double batch. I also added scant tablespoon of smoked paprika for flavor. I tossed them with the dry ingredients before cutting in the fat & adding milk. I used parchment paper to briefly pat this into rectangle aprox 1/2 thick. I laid down a single row of 4 slices of cheese in the middle of dough, folding the sides to completely cover cheese. (Parchment paper comes in handy here). Fold in ends to seal in the molten goodness. Brush with soft butter and top with shredded cheese of your choice. Bake 425 degrees for 15-18 min. Try to wait for it to cool enough not to burn the skin off the roof of your mouth... brutal when the chili peppers get in there... Let me know if you have questions.
