Okra Creole 2 tbsp olive oil 1 cup finely chopped onion 1 cup finely chopped fresh parsley 1 cup finely chopped green onions 1 cup finely chopped red bell pepper 1 tsp crushed and dried mint 2 tbsp mined garlic 2 cups fresh peeled and chopped tomatoes 1 cup tomato sauce 2 tbsp soy sauce 1 cup dry white wine 1 lb of smoked sausage, or peeled and deveined shrimp, your choice 10 cups thinly sliced fresh okra cajun seasoning to taste ground red pepper to taste Using a deep heavy pot, heat oil over medium fire and saute onion, parsley, green onions, bell pepper and mint until the onions are clear... Stir in tomatoes, tomato sauce, garlic, soy sauce, wine, and sausage or shrimp... Cover and cook over medium heat until it comes to a boil, stirring occasionally... Stir in okra, cajun seasoning, and red pepper... Reduce heat to low, and let simmer covered, stirring occasionally, until okra is tender... Serve over rice...
