Okra in Yogurt Sauce... adapted from yahoo Ingredients • 4 tablespoons mustard oil, divided • 1/2 kg okra, trimmed and sliced into 1/2-inch-thick rounds • Salt to taste • 1 cup desiccated coconut • 1 teaspoon brown mustard seeds • 1/2 teaspoon cumin seeds • 1 small fresh green chile • 1/2 cup to 1 cup water • 1 cup plain yogurt • 1 dry red chilli • 2-3 sprigs curry leaves • 1 teaspoon fresh lemon juice • 2 tsps ginger-garlic paste • 3/4 tsp black mustard seeds Directions 1. Heat 3 tablespoons oil in a heavy skillet. Fry okra for about 5 mins on high heat, stirring occasionally. Add salt and continue frying until almost done. 2. Purée coconut, brown mustard seeds, cumin seeds, and chile in a blender or food processor with enough water (1/2 cup to 1 cup) to form a fine paste. Add yoghurt and blend again. 3. Heat remaining 1 tablespoon oil in a small heavy skillet over medium-high heat and cook black mustard seeds, curry leaves and red chili until mustard seeds stop to pop. 4. Add yoghurt mixture and salt to taste, cook for a few mins, add fried okra and cook until okra is completely done. Season with lemon juice.
