One of my favorites, I slow cooked corn beef brisket, seasoned with fresh rosemary, garlic, olive oil parsley, 2 sliced red onions, carrots and dry red wine and fresh whole tomatoes. I also added a little liquid smoke. I served it with homemade pan fried russet tater fritters. To get the taters perfect, shred taters and add 1 onion and fresh chives and 3 egg whites. Make sure you squeeze all the liquid from the tater and onions first. Then fry them up!!!
