One of the biggest staple meals we have in our house is Spag Bol mmmhmmm but going low carb made us rethink our options... Introducing Brocconaise! Just cook up whichever low carb bolinaise you love and serve it on a bed of steamed broccoli (make sure u let the broccoli drain for a good minute, its very juicy otherwise). Its surprisingly more satisfying than having pasta but without that bloated feeling after. We prefer to limit our intake of red meat, so we use pork and veal mince to cut down the red a little, then only use about half the mince you would normally and pack the mince topping with 2 each grated zuchini and carrot (tonights carrot was chopped but it takes longer to cook this way) and being dairy free its topped with soy cheese from a specialty deli - not fond of the soy cheese at Coles or Safeway... Would anyone like to share what they had for dinner tonight, or even just your fave low carb meal?
