One of the menu items I miss is hashed brown potatoes. So this morning as I was getting breakfast ready, my eyes glanced over a bowl of turnips I had got at a farm a couple days ago, and I thought, why not? So I quickly shredded one, put some bacon fat in the pan, added salt and pepper, and fried them! The volume shrank considerably, but they were Very Tasty. They didnt get crispy like hash browns, but they did turn brown and caramelized quite nicely. So my breakfast this AM was 2 eggs scrambled with sausage, a side of 1 cup cooked mixed greens from the large batch I made a couple days ago, and a side of fried turnips! Hash brown potatoes and toast was NOT required to make this a tasty, satisfying, and nutritious breakfast. 6 grams effective carbohydrate, 7 grams fiber, 426 calories. And yes, I drank the pot likker (broth from the greens). That might be the best part. ;)
