One of things I love and hate about my work is how abstract on adaptable I have to be. 90% is love but when Im sick and my heads fuzzy its just sucky and exhausting. I think thats why I love food. Theres creativity but also steps and a linear process, not cooked----> cooked. Sicko brain needs A to B not A to 42. So me and dopey (sick me) were more then happy to make a kid pleasing noodle, leftover turkey and veggie dinner that really required no brilliance just the ability to not cut myself... Win! Yesterday after I cut up my chicken I threw the bones in the oven with cut carrot, celery, onion, garlic, peppercorns and some olive oil. I threw this in a 350 oven and roasted it until I remembered Id put it there, (probably about an hour). I brought this onto the stove and covered the whole shebang with water, added a bay leaf, set it to low, forgot about it again and drove away... Fortunately hubby smelt it and turned it off. Double fortunately it had reduced to this gorgeous thick rich stock. Flash forward back to tonight. I cut two carrots, 1/4 head of cauliflower, and a green pepper with no injuries. I started the carrots on medium heat in a decent sized pan with about a Tbsp of olive oil. Once they had a few minutes solo I added the cauliflower and peppers. I had a pot of water boiling too and started cooking a bunch of tagliatelle which is a lovely thick noodle. Back to the veg, I added frozen corn and peas and a bunch of leftover turkey Id thrown in the freezer too. In a small separate pot I melted about a Tbsp of butter and added the same of flour. Over medium heat I whisked in about 1/2 cup of that lovely stock and roughly 1/4 cup whipping cream. More stock or water would have made a thinner sauce. Sauce went over the veggies and turkey, added my noodles and done... Now if you didnt spend yesterday partially forgetting about the stock you were making a regular chicken stock would be fine. Id add some extra seasoning for sure but it would still be easy and definitely little kid friendly.
