Orecchiette Pasta with Sausage and Broccoli di Rabe Give this a try for tonights dinner! You just need a couple ingredients. If you can not find broccoli di rabe you can use broccolini or broccoli! I use a lb of sausage but more can be used. 1 lb Italian sweet sausage 1/4 cup extra virgin olive oil + 1 tbs 1 cup chicken stock, heated 6 garlic cloves sliced thin 1 head of broccoli di rabe bottom 2 of the stems cut off and discarded 1 tsp Crushed red pepper flakes 1 tsp salt 1 tsp fresh black pepper 1 lb of orecchiette pasta Grated Romano cheese Remove the sausage from the casing and cut the sausage meat into 1/2 pieces. Get a large pot of salted water boiling. Put the rabe into the boiling water for 3-5 minutes. Remove without draining the water and place the rabe on a cutting board and chop into small pieces. Keep the pot of water on a brisk boil and add the pasta to cook 2 minutes under recommended time. In a large 13 skillet add 1 tbs of olive oil get it hot and add the sausage and garlic and sauté for 2 minutes. Now add 1/4 cup of extra virgin olive oil and turn the heat to medium. Add the red pepper flakes, salt, pepper and the rabe. Continue cooking this for 2 minutes. Reserve 2 cups of the pasta water, strain the pasta and add the pasta to the skillet along with one cup of PRE HEATED chicken stock and 1/2 cup of pasta water. Cook this on a high heat turning the pasta, sausage and rabe into the sauce. If need be add more pasta water. After 2 minutes remove from heat and add about 1/4 cup of grated cheese and a good drizzle of extra virgin olive oil and mix all together.
