Our Trio of Cheese are: ~ BARBER’S 1833 VINTAGE CHEDDAR - ENGLAND – pasteurised cows’ milk, vegetarian. Made on the Barbers family farm in Ditcheat, Somerset, this cheese is the culmination of six generations of cheese-making experience. This cheese is matured for 24 months to reach its full potential. The result is a cheddar that is powerful in its intensity with an unrivalled complexity and depth of flavour. Whilst the cheese retains a distinctive smooth and creamy background, it often produces a slightly crunchy texture that is a result of the natural development of calcium lactate crystals late in the ageing process. Its savoury and naturally sweet notes is a superb example of how good a traditional Cheddar can be. ~ STRATHDON BLUE - SCOTLAND - pasteurised cows’ milk, vegetarian. Made with milk from the two remaining dairy herds in Caithness, Scotland, Strathdon Blue has a mellow, aromatic flavour which has earned awards at the British Cheese Awards & World Cheese Awards. When ripe, this cheese has a soft, yielding texture more like a continental blue than a Stilton. The flavours are milky and savoury, sometimes quite salty. A strong body & rich texture make this cheese perfect for cheese boards. ~ DEVON OKE - ENGLAND - pasteurised cows’ milk. From Stockbeare Farm in North Devon on the edge of Dartmoor, this cheese by Rachel Stephens is made to a seventeenth century cheese recipe she found in her attic. The cheese is matured for six months during which time it develops a smooth rich-smelling crust and a wonderful firm, moist, creamy interior. A gold award winner at Taste of the West Food & Drink Awards 2006.
