Our familys favorite Scones: Strawberry Chocolate Chip Scones Preheat oven to 425 If using scone pan I spray with Pam Baking Spray-if using a cookie sheet just line it with parchment paper In a large mixing bowl 3 cups apflour 1/3 cup sugar 1 teaspoon baking soda 2 teaspoons baking powder pinch of salt I mix with spoon then scoop into food processor Thru shoot I add chunks of 1 ½ stick butter….pulse processor until mixture looks like bread crumbs On the side I shop up 1 cup fresh strawberries and knife chop ½ cup milk choc chips I also switch this up sometimes I use blueberries and white choc chips I dump the flour mixture back into original bowl Fold in berries and chocolate Now this is a preference-depends upon my mood…sometimes I dump this on the counter-make a well pour 1 to 1 ¼ cup butter milk and mix with hands. It is easier and just as good if you pour the buttermilk into the bowl but don’t over mix….dump on counter and flour pat into fairly thick disc….again this next step is preference….sometimes I just cut them into pie size shapes from disc or if I mix on counter I scoop the dough up and pat it into my scone pan…this look more rustic. Brush with heavy cream and sprinkle with sugar. Bake 400 for 14 minutes…want a slight golden color and to be done in the center…depending on humidity sometimes they bake for 17-18 minutes and how thick I have made them. Let them cool then flip them out onto parchment paper I just make a glaze with about ¾ cup powdered sugar and heavy whipping cream…a little at a time until a thick icing consistency and drizzle on top.
