Our first "Dinner Lab" experimental dinner in Austin in a warehouse with no air conditioning...not a smart thing in Austin, Texas!! The menu...(1) Diabloed Duck Eggs with local greens and roasted pecans. (2) Heirloom tomato and watermelon salad with pure luck feta cheese, shaved red onion, fresh basil, and tomato sorbet; (3) Guinea Hen Rillette, with grilled bread and onion marmalade; (4) Smoked Roasted Whole PIg with warm potato salad, rainbow carrot slaw, and smoked cherry aus jus. (5) Texas peach cobbler with buttermilk mint marigold ice cream. A lot of fun and interesting dishes...but all diminished by the HEAT!! Only one whole pig for 90 people...not enough pork!! The dishes were unique and interesting but not exceptional. Unlimited pinot noir helped mitigate the combination. We will try the format again, but not as awesome as we had hoped.
